U P D A T E

It’s not been the best week, what with the unwelcome news that Perth and Kinross will enter tier 3 on Friday. Tricky times lie ahead for many and I feel grateful that I’m able to continue with Italba delivery service for the foreseeable future.

There’s still some space on Friday, but Saturday is looking full – DM me if this is your preferred date as I may manage to squeeze you in.

Anyway, on a positive note I have a belter of a new dish

NDUJA AND RICOTTA TORTELLONI with tomato and basil ragu.

Nduja’s roots are in the south region of Italy called Calabria. It’s a delicious, spicy and spreadable sausage and like many other Italian dishes it found its origins in
‘Cucina povera’. Cuts of free range pig are mixed with local peperoncino and other spices giving it a unique taste, colour and consistency.

Nduja has become incredibly popular in the UK in the last few years and is widely used in many pasta recipes, pizza topping etc.
So this week Ive decided to use it as filling for my homemade tortelli, mixed with creamy ricotta cheese and served with a mild Italian tomato sauce to smooth the heat. 🌶
